What I did with the leeks…

So I figured since I’m not letting my organic produce go to waste, I should do something with those leeks right away.
And this is how it went:
One of my best risottos to date… this might be what I do with all the leeks I buy… although I did see an interesting recipe for a caramelized leek and bacon tart…. so maybe I’ll try that too.
